These apple cinnamon energy bites are the perfect healthy bite-sized snack. They’re also no-bake, AIP, and Paleo!
I love me sone energy bites. I have a few on here including, salted caramel pumpkin spice bites, chocolate fudge energy balls, and carob fudge!
But it was time for a new flavour! And since it’s apple season, I chose to make an apple cinnamon version, naturally. And they turned out soooo good!
Why I love this recipe
Make ahead snack
Being on a restrictive diet makes snacks and convenient foods a lot harder to find. That’s why I love that these don’t take long to make, keep well (especially in the fridge), and are a convenient grab-and-go snack!
Simple
Throw the ingredients in a blender or food processor, process, roll – DONE!
Fun
Some things are quite boring to make, like frying ground meat in a pan, not the most fun and exciting thing to do. BUT making no-bake treats using a blender/food processor and then rolling them in your hands, a little more exciting!
Get the kids in on the action, they love it – and it gives them an opportunity to enjoy making healthy food!
Healthy
They are sweetened with dates (no extra sweeteners), they include healthy fat, fibre, and protein from the collagen. Collagen can also help with sealing a leaky gut – and keeping hair, skin and nails healthy!
What you need to make these apple cinnamon energy bites:
Dates
Medjool dates work the best!
Coconut oil
If you can’t do coconut, palm shortening will also work!
Coconut flour
If you can’t do coconut, tigernut flour will also work!
Cinnamon
Did you know cinnamon helps to lower blood sugar? Making it an excellent addition to any treat!
Apple Chips
I used these apple chips and they worked great, but you’re going to need to crush the apple chips, especially if they are large.
You can either chop them up with a knife on a cutting board OR if you want less mess, use a ziploc bag.
Place the apple chips in the ziploc bag, take the air out, seal the bag, then roll over it with a rolling pin until the apple chips are crushed into smaller pieces!

Ingredients
- 6 medjool dates
- 3 tbsp coconut oil
- 2 tbsp coconut flour
- 1/4 cup collagen
- 1 tbsp cinnamon
- pinch salt
- 1/4 cup apple chips, crushed
Instructions
- Place dates, coconut oil, coconut flour, collagen, cinnamon, and salt in a blender or food processor. I used the vitamix. Process until texture is like wet sand.
- Add crushed apple chips to blender or food processor. And slowly mix them in.*
- Scoop by the tablespoon and form into balls.
- Enjoy!
Notes
Store in refrigerator for up to a week.
*If apple chips are large, make sure to crush them. Either chop on a cutting board with a knife OR for less mess you can crush in a ziploc bag. I haven’t tried it but I would think you could just add a bit more coconut flour in place of the collagen. Around two tablespoons is what I’m thinking…
