These vegan Chocolate Cherry Fat Bombs are sweet, rich, and creamy. Sweet juicy cherries inside of dark rich chocolate, oh yeah!

Since I mashed the cherries, the juice is mixed into the chocolate, making it even sweeter.

These Chocolate Cherry Fat Bombs are sweetened with stevia, so they are sugar-free. Although you would never know they were sugar-free from tasting them.

Not only does the juice from the mashed cherries add sweetness, but adding almond extract adds sweetness as well. These are low in carbs and high in fat - perfect for a keto diet.

Fat bombs are an easy, palatable way to get more coconut oil into your diet. I add coconut oil to my morning smoothie and Vegan Bulletproof Coffeeas well.

🧾 Ingredients

  • Coconut oil: Adds fat and a creamy coconut flavor.
  • Coconut butter: Adds fat. It's one of the fat sources in a vegan keto diet.
  • Cacao powder (or cocoa powder): Adds chocolate flavor.
  • Stevia: Adds sweetness. You could use your favorite sugar-free sweetener.
  • Almond extract: Adds a fruity flavor. You can leave it out.
  • Vanilla extract: Enhances flavors. You can leave it out.
  • Dark sweet cherries: I used frozen cherries. You could also use fresh.

🔪 Instructions

Step 1: Mix all the ingredients except the cherries.

Step 2: Once the cherries have thawed, mash them with a fork and combine them with the chocolate mixture.

Step 3: Fill mini cupcake liners, an ice cube tray, or silicone molds with 2 tablespoonfuls each of mixture.

Freeze and store in the fridge.

How to Melt Coconut Butter

  • Melt coconut butter by placing the jar in a saucepan filled with water over medium heat. Occasionally pull the jar out with oven mitts and stir it. If it's hard to stir, stick it back in the simmering water until it's ready.
  • Do NOT put the coconut butter in the microwave. It will cook unevenly and burn.
  • When it's easy to stir, spoon it into a measuring cup to measure out the amount you need.

💭 Tips

  • The coconut oil CAN be heated in the microwave if it's solid, but the coconut butter will cook unevenly and burn.
  • Freeze the fat bombs and store them in the fridge or freezer.

Instructions

  • Mix all ingredients except dark cherries.

  • After the dark cherries have thawed, mash them with a fork. Mix cherries and their juices in chocolate mixture.

Notes

I have found the easiest way to melt coconut butter is to boil some water. Then, reduce the heat to a simmer, and put the jar in the water. Keep an eye on it, stirring occasionally. Use an oven mitt or towel to lift out of the water and stir some more. Now you have melted coconut butter!

    I would like to ask about checking the calories listed. It says 67kcal which I think means 67,000 calories. Is this actually correct? Even if you divide that number by amount of chocolate cherry fat bomb servings of 12, each fat bomb would be 5,583 calories. Please comment. Thanks so much

      Hi Janet, 67kcal is 67 calories. That's just the way it is written. I actually never noticed that until you pointed it out. There's a bunch of info on Google, which tells why it is written that way. I'll be reading more on it myself since it's new to me!

    These taste wonderful! Just one comment: my mini cupcake liners (that the recipe says to use) only hold 1 tbsp. of the recipe... so I got 18 fat bombs of 1 tbsp. each. I think my ice cube tray would have fit 2 tablespoons so I'll try it next time.
    Also, I just melted the coconut oil and coconut butter in a saucepan over really low heat, then stirred in the rest of the ingredients (cherries were pre-thawed overnight in the fridge). And... my fork wasn't mashing the cherries very well so I just stuck my scissors in the measuring cup and cut them up in small chunks. 🙂 My first fat bombs ever - thank you!Chocolate Cherry Fat Bombs (14)

    These look amazing, but I'm not understand how they're so low in carbs because cherries have sugar - can you help explain this please?

      There’s not many cherries in each serving. 3/4 cup cherries have a little over 14 carbs, and you divide that by 12 servings.
