Sometimes you just need a quickchocolate dessert [like this chocolate lava cake] that is as easy as it is delicious!Oh yeah, did I mention that this gluten free chocolate lava cake is also rich in magnesium, fat soluble vitamins, and protein?

No guilt here, just abundant nutrition 🙂 Plus, it has a warm gooey center makes it the perfect pair with ice cream!

Chocolate Lava Cake (gluten free)

Yield: 2-3 servings

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Ingredients

  • 4 tablespoons organic (or pastured) butter
  • 4 tablespoons dark chocolate chips
  • 4 tablespoons organic sugar(like this) or coconut sugar (I blend my sugar in a Vitamix blender to make it super fine for dessert making)
  • 3 tablespoons cacao powder(like this)
  • 1 teaspooncoconut flour (like this)
  • 2 organic egg whites (beaten with a stick blender till peaks form)
  • 4 organic egg yolks
  • ⅛ teaspoon rice wine vinegar or white wine vinegar
  • small pinch of salt
  • Chocolate shavings (like this)

Instructions

  1. Over medium heat in a double boiler, combine chocolate chips, butter and sugar until melted. Stir to combine.
  2. In a separate bowl beat 2 egg whites using a stick blender to form stiff peaks.
  3. Add egg yolks and fold egg whites into chocolate mixture.
  4. Add cacao powder, coconut flour, salt and vinegar.
  5. Grease 2-3 small ramekins or short glass mason jars with butter and fill with chocolate batter.
  6. Bake at 350 degrees for about 14-16 minutes until top is just barely set. Do not overcook, or you will lose the gooey center and have more of a dense brownie!
  7. Top with chocolate shavings and your favorite dairy or non-dairy ice cream and enjoy!


*If you have high copper levels you may want to reconsider your chocolate consumption.

    This cake looks AWESOME!

    However, using the dark choc. chips you have a link to is NOT gluten free--as they are made with malt barley.

    Do you have ideas on how to make this egg free? Would it work to use a substitute for those of us who are allergic to eggs?

    These are just delicious!
    I had great success making them tonight for a small group. Worth noting that I made the batter ahead of time and refrigerated it in the jars for about 4 hrs, to save time. They still turned out beautifully but took nearly 20 min to cook.

    I'm lactose intolerant, what can I replace the butter with?

      Butter contains so little lactose, it's typically not a problem for those who are lactose intolerant. It's usually a problem for those who have a casein allergy. Regardless, I bet ghee or coconut oil would work great.
