This Microwave Peanut Brittle is super easy to make with only 6 ingredients! It will be a family favorite treat for sure! It's perfect for some holiday snacking or to put in gift bags!

With the holiday season right around the corner I have started making some holiday treats to get ready.

Peanut Brittle is one of my favorite treats to make, but I do not make it often. It is so rich and sweet, when I make it, I end up eating way too much!

This peanut brittle is made in the microwave! So, it is super easy to make with very simple ingredients! I hope you enjoy it as much as I do!

How to make Microwave Peanut Brittle:

This is pretty simple to make. Start by melting your corn syrup and sugar together. Add in your peanuts and mix them into the melted sugar and cook again.

Then immediately mix in your butter and vanilla and cook again. After this mix in your baking soda well, then spread out the peanut brittle on the baking sheet.

Allow it to cool completely and then break into pieces.

Ingredients:

  • Sugar- white granulated sugar
  • Light Corn Syrup
  • Peanuts - I used salted and roasted peanuts.
  • Unsalted Butter
  • Vanilla Extract
  • Baking Soda

Directions:

Step One - Prepare a baking sheet with parchment paper and set aside.

Step Two - Place sugar and corn syrup in a microwave safe bowl. Microwave for 3-4 minutes string every 1 minute.

Step Three - Remove bowl from microwave and stir in peanuts. Place back into the microwave and cook for 3 minutes. This should now be a light brown color when done.

Step Four - Remove bowl from microwave and stir in butter and vanilla. Microwave again for 1 minute.

Step Five - Last remove the bowl again from the microwave and stir in baking soda. Your mixture should be light and foamy. Quickly pour this onto your prepared baking sheet.

Step Six - Allow to cool for 30-40 minutes. Break into pieces and serve.

Peanut Brittle Tips and FAQs:

  1. Cooking Times May Vary - All Microwaves are different. Different brands, wattages, and settings. Even microwaves from the same brand have differences. You may need to edit your cooking times accordingly. You have to make sure you don't overcook the sugars so that they harden in the microwave or burn.
  2. Stirring Is Your Friend - While you are cooking with the microwave, if you feel you need to keep stirring the brittle you should. Stirring will prevent the sugars from hardening.
  3. Watch the Color - The color to this is key. Once the peanuts are added in and mixed in, they will change the color. Overheating could cause the color to get too dark, so watch the microwave while cooking.
