These peanut butter cream cheese bites are the perfect little treat for those on a low carb diet or even if you aren’t. Each has only 1.1g net carbs.

I have a sweet tooth that seems to be growing and growing over the years. So when I want to lose weight it’s the first thing that I try to control.Total denial of sweets does not work for me and that is why I make keto snacks like these peanut butter cream cheese bites. They are super easy to make and nice to have on hand in the freezer so I can have one or two in the evening.

This is really a recipe redo. I made a Weight Watcher recipe when I first started my blog but this is how I made them now that I’m following a low carb diet. If you are looking for that old recipe you can find it at the bottom of the page.

However for this cream cheese and peanut butter recipe, each one has only 1.1 net carbs and they are pretty big so you wouldn’t want to eat more than one or two at the most.

Peanut Butter Cream Cheese Recipe

All you do is whip your cream in a standing mixer until it’s light and fluffy. Then add the rest of the ingredients and mix until they are well combined.

Use a silicone spatula and spoon the mixture into a silicone tray and freeze. The silicone makes it easy to pop out when then are frozen. Once frozen I then put them in a freezer bag and grab one when I want a treat. I like this silicone mold because the squares are big but not too big for treats like these.

A Note About PB2 Peanut Butter Powder

I like to us PB2 in recipes because it has less carbs, fat and calories than peanut butter. PB2 is a powdered peanut butter and its great to throw in shakes and smoothies as well as low carb keto snacks like this one.

In my opinion it doesn’t taste like peanut butter when you add water to reconstitute it but it is good in recipes. If you are looking for more PB2 keto recipes, try my chocolate peanut butter freezer candy. They are so good!

This peanut butter cream cheese recipe is perfect for those days when you just need a little something something after dinner or as a snack. I haven’t varied it much as I love peanut butter but I’m sure you can make a similar one with cocoa powder or vanilla protein powder.

Ingredients

  • 1cupheavy whipping cream
  • 3TablespoonsPB2 Powdered Peanut Butter
  • 2TablespoonsSwerve or Splenda
  • 2Tablespoonssour cream
  • 4Tablespoonscream cheesesoftened

Instructions

  1. Pour your cream into a standing mixer and whip until light and airy.

  2. Add the rest of the ingredients and mix well.

  3. Spoon into silicone ice cube tray or other silicone mold.

  4. Freeze over night.

  5. Each: 82 cals / 8.3g fat / 3.5g carbs / 2.4g fiber / 1.2g protein / 1.1g net carbs

Older Weight Watcher Recipe for peanut butter cream cheese cubes (1pt)

Note this is the recipe I made back in May 2o14. At the time I calculated it to have 1 Weight Watchers point. However their systems change all the time and I am not sure if it still has only 1 point on their newer systems. So please calculate for yourself.

  • 4 tablespoons low carb cream cheese
  • 2 tablespoons non fat greek yogurt
  • 3 tablespoons PB2
  • 2 tablespoons Swerve sweetener
  • 1 cup whipped topping, fat free

Instructions

  1. Soften cream cheese then add to a bowl.

  2. Add to the cream cheese the yogurt, PB2, and sweetner. Whip or cream all ingredients.

  3. Gently fold in the whipped topping.

  4. Pour into molds and freeze. I used a large ice cube tray.

  5. Once frozen, take out of molds and put in a freeze bag.

  6. This made 10 servings for me and according to my calculations each serving is only 1 WW point.

    Can you substitute greek yogurt for sour cream, and what can you use over the splenda?

      Hi Christine, I think you could use greek yogurt instead of sour cream and any sweetener you like would work. I chose sour cream and Splenda for low carb purposes but you can use substitutes. You might want to try stevia or erythritol for more natural sweeteners. Please let me know if you have any other questions.

    Can I make these with us butter instead of pb2? My son is allergic so I don’t Have peanuts in the house. I’m not completely sure what the equivelant of 3 tbsp pb2 is to the sun butter? What do you think?

      Hi Michaela, yes you can make them with sun butter or any nut butter for that matter. However if you are going for the low carb, the total numbers would change.
      For example the nutrition for 3 T of PB2 is 67 cals / 2.2g fat / 7.5g carbs / 3g fiber / 7.5 g protein
      And for sunflower nut butter 3T = 270 cals / 18g fat / 12g carbs / 6g fiber / 13.5g protein

      If you don’t care about the carbs, then I would do a straight substitution. PB2 doesn’t have a real strong peanut butter flavor. You might even get by with 2T of sun flower nut butter. I would taste it before you freeze them. Hope this helps!

    This is a new kind of treat to me but I love peanut butter so I am definitely tempted to try – do you eat them frozen or do they stay firm enough defrosted?

      No you eat them frozen. You can let them thaw a little but they get messy. I just take one out of the freezer and eat with my fingers for a quick little snack or treat.
