Sugar Free Pecan Pie Muffins

This is a muffin that tastes a lot like a pecan pie.

However, is is good enough to eat for breakfast!

Did you try my Sugar Free Pistachio Muffin recipe?

That recipe is made more flavorful and colorful thanks to the help of a box of pistachio pudding.
This recipe however, is really a more simple recipe and has no 'surprise' ingredients such as pudding added to it.

This recipe is for anyone asking what does pecan pie taste like.

The truth is that pecan pie tastes a lot sweeter than this recipe for muffins.
One reason for that, besides the obvious that pies are meant to be a dessert, is that that this recipe has no added sugar or sugar-like ingredients added to it.

Those of us who have enjoyed a slice of pecan pie in the past, cant probably agree that pecan pie is among the sweetest pies out there.

This could be why pecan pie is really enjoyed by many folks during the holiday season.
However, this recipe for pecan pie muffins is intended to mimic that flavor of pecan pie and not the pie itself.

You may also be wondering what is the healthiest muffin to eat.

Yes, this recipe is made without adding sugar to it. If your goal is to not eat sugar than this may be a healthier choice for you.

This recipe for muffins does call for a brown sugar alternative.

I suggest that you use a brown sugar alternative that is granular for best results. Also, use a brown sugar alternative that measures 1:1 with regular brown sugar in order to keep the balance of ingredients intact.

Here are some tips for making muffins.

I just mentioned that you should choose a brown sugar alternative that is granular for best results. That sugar alternative should also measure 1:1 with regular brown sugar.

Here are some more helpful tips for you.

  1. This recipe calls for melted butter. Melted butter helps to give these muffins that pecan pie flavor and goodness. If you are considering using oil or another alternative (mashed bananas could work, same amount), take this into consideration.
  2. These muffins tend to stick. As a result, my suggestion is to use two methods of prep. For example, using both nonstick spray and a light dusting of flour to prevent sticking.
  3. I always tell my readers that when it comes to making muffins, it is especially important to not over-mix the batter as this can result in muffins that are harder to chew. Simply mix your ingredients until just blended instead.
  4. My readers are always asking for options with my ingredients to make what they are baking more friendly to a certain diet. This recipe can be made lower in carbs or gluten free. To do so you will need to use a low carb all purpose flour, keto all purpose flour , or use an all purpose gluten free flour. Please read the label on the package for important information on how to use it in a recipe such as this one.

Here is how to store muffins.

In the event that you have leftover muffins, simply store them in an air tight container, such as a muffin container. Refrigeration is not necessary as the muffins should be good for a few days if stored correctly.

Ingredients needed to make Pecan Pie Muffins.

  • Flour- ½ cup, all purpose.
  • Brown Sugar Alternative- 1 cup. Reminder, use a brown sugar alternative that is granular for best results. That sugar alternative should also measure 1:1 with regular brown sugar.

  • Eggs- 2.
  • Pecans- 1 cup chopped, divided.

How to make Sugar Free Pecan Pie Muffins.

  • Preheat your oven to 325 and double prep your muffin pan for nonstick.
  • In a large mixing bowl, use a whisk to mix together the flour and the browns sugar alternative.
  • Next, in another bowl, whisk together the butter, vanilla extract, and the eggs.
  • Add the wet ingredients from the second bowl to the dry ingredients in the first bowl. I like to add half at a time and gently stir between additions. Stir these ingredients until just combined- lumps are not a big deal in these muffins.
  • Fold in half of the chopped pecans. The top each of the muffins with the remaining pecans before baking.
  • Bake for 25-28 minutes or until a toothpick comes out clean from the center. Remove the muffins from the muffin pan and allow them to cool before serving.
