EASY BANANA CAKE
Yesterday was Mr. Idea Room’s birthday! He likes food in general…but he really likes cake. Especially our Banana Crumb Cake with Sour Cream. This recipe has been part of my family’s recipes for as long as I can remember. We actually call it Sandy’s Cake, after my mom’s friend Sandy who shared her family recipe with us! I have seen similar recipes of a cake like this referred to as Banana Crumb Cake, or Banana Coffee Cake.
FAVORITE BANANA COFFEE CAKE RECIPE
Anyways…One of my favorite things about this cake is that it is made with bananas. And for some reason when I buy bananas…they either are gobbled up quickly before I can use one on my bowl of Cheerios in the morning (grrr…and yes…I LOVE me some Cheerios). Or, they sit and turn brown forgotten in the fruit basket.
So, this is one of our favorite go to recipes. This is also a recipe that we like to make and share with our neighbors and friends.
BAKING SUPPLIES FOR BANANA CAKE
- 9×13 Non-Stick Wilton Pan with Cover
- Simply Calphalon 9-Inch by 13-Inch Bakeware Cake Pan
- Kitchen Aid Stand Mixer
- Silicone Spatulas
- Hot Pads
- measuring cups
- measuring spoons
- cooking spray
- kitchen hand towel
- plastic wrap
- cake spatula
- cooling racks
INGREDIENTS FOR BANANA CRUMB CAKE
- butter
- sugar
- bananas
- eggs
- vanilla extract
- baking powder
- baking soda
- salt
- all-purpose flour
- sour cream or vanilla yogurt
Cake Filling:
- brown sugar
- ground cinnamon
- walnuts or pecans
- chocolate chips, optional…but why wouldn’t you?
HOW TO MAKE BANANA CRUMB CAKE
- Cream together in a standing mixer or hand mixer the butter and the white sugar until smooth and creamy.
- Mix and beat in the eggs one at a time.
- Beat in the bananas until mixed together.
- Beat in the sour cream.
- Add the vanilla extract.
- Mix in the dry ingredients and mix together until smooth.
- Make the filling by mixing all the ingredients together in a medium bowl and set aside.
- Spray with cooking spray a 9×13 inch baking dish.
Layer half of the batter in the bottom of the dish.
- Sprinkle half of the filling mixture over this layer of batter.
- Add the rest of the batter layer.
- Then top with the other half of the filing mixture. I throw a few chocolate chips on this layer for good measure.
Bake 350 degrees F for 45 minutes.
- Check with a toothpick to make sure the center is cooked all the way through. If it needs more time you can cover with aluminum foil to cook the center but prevent the top from being too dark or overcooked.

Ingredients
- 1cupbutter

Recipe Notes
Sometimes the middle of the cake needs to bake longer. If so, put foil over the cake after the 45 minutes and bake it for another 5 minutes. Test with a toothpick in the middle to see if the batter sticks to it, if it comes out clean…the cake is finished.

HOW TO STORE
This cake recipe is easy to store. Keep it in an air-tight container and it should stay fresh for up to one week. It will last a little longer if you keep it in the refrigerator.
CAN I FREEZE THIS CAKE?
If you want to save this cake for longer than a week, or make it ahead of time for when you want to serve it, it can be frozen for up to two months. Simply wrapped the cooled cake in plastic wrap and then keep in an air-tight container or ziploc freezer baggie in the freezer. Let thaw on the counter before serving.
