These Healthy Ginger Molasses Cookies are SO. GOOD.

Soft, chewy, sweet, spicy, and so warming! They taste like a warm hug. On a cold day. And they are packed with nutrient dense foods, so you can eat multiple without feeling terrible afterwards! Gooooodbye, sugar crash!

Paleo Ginger Molasses Cookie Ingredients

These Ginger Molasses Cookies are made from very few, simple ingredients. Like all of my recipes!

I love to show that BAKING, especially "HEALTHY" baking, DOES NOT need to be difficult!

I know lots of people out there claim they "can't cook/bake", but this recipe is seriously foolproof. It has so few ingredients, and even if some ratios are slightly off, they will still work out 99% of the time.

You will need:

-Coconut Oil

-Coconut Sugar

-Cinnamon

-Dried Ginger

-Molasses (Date Molasses/Date Syrup will also work)

-Coconut Flour

Paleo Ginger Molasses Cookies

Yield: 8 Cookies

Prep Time: 5 minutes

Cook Time: 9 minutes

Total Time: 14 minutes

These Paleo Ginger Molasses Cookies are chewy on the inside, crisp on the outside, and the perfect, comforting cookie to enjoy on any Holiday morning without a sugar crash!

Ingredients

Instructions

  1. Preheat oven to 350. Mix room temp/soft coconut oil and coconut sugar until combined, like a paste.
  2. Add in egg and molasses and mix to combine.
  3. Add in the rest of the ingredients, and fold together until combined.
  4. Take about 1 Tbsp of dough, roll into a ball, and roll in mixture of coconut flour and sugar. Place on baking sheet and gently press down with your fingers. T
  5. Bake for about 9 minutes. Let cool completely.

Notes

This recipe is gluten free, dairy free, and paleo friendly. It will not taste like a traditional Ginger Molasses Cookie, but a delicious allergen-friendly variation!

If you want to enhance the ginger flavor, you can add some freshly grated ginger to the dough.

    Hi Liz, sorry you had some trouble! I just re-tested the recipe, and all the ratios work as called for. Was your coconut oil solid? Also, I tried refrigerating the dough, and while it worked, I actually found it better when they were baked immediately. Sorry yours turned into pancakes! Hope they still tasted okay!

    Just made these last night and they came pretty much as yours, I 'm not used to bake cookies so I wasn't sure if they were done or not ('cause I thought they were not firm enough) and I left them on the oven for too long so they kind of burned a little, however the flavor was great ( although I would have preferred them to be less sweet, so next time I'll add less sugar), even my nephews loved them!

    Thank you for this recipe. I used to own a home-based bakery and have struggled to find paleo recipes that look and taste like the pictures shown but these are perfect. I only had coconut palm sugar so I used that and was out of ginger so I used allspice and they look exactly like your photos! So excited!

    Ok these are delightful! I was worried because I didn’t have coconut sugar, molasses/date syrup or fresh ginger! I subbed Swerve brown sugar for the coconut sugar, and pure maple syrup for the molasses and used ground ginger whipped everything till a solid ball formed and rolled in coconut flour, white sugar (just a smidge!), and more ginger and OMG these are SO GOOD. Fluffy, warming, addicting. I proceeded to have 4 total haha. Will be making these again next time I’ll use the proper ingredients!

    Nicole, these are scrumptious!!! I've made several other "healthy" ginger/molasses cookie recipes, and all of them lacked a true gingerbread flavor. But these are so delicious! I made a substitution of 1/8 cup pure maple syrup plus 2 tsp. granulated Monk Fruit blend instead of the 1/4 C. coconut sugar. I also added 1/2 tsp. nutmeg. They are phenomenal! I had almost given up hope of finding a healthier recipe that replicated the flavors of a chewy gingerbread cookie. Thank you.
