I’m not a big cake person but I’ve always heard from people trying to lighten up their diets that you can make really delicious cake using cake mix and diet soda. My mom ended up making some and it really did taste moist and delicious, so I decided to try it myself, as cupcakes. They turned out pretty well!
I decided to top them with frosting (who eats cupcakes without frosting?) and I found a yummy looking cream cheese frosting recipe on the Skinny Taste site. The frosting turned out pretty good, but I opted to replace the sugar in the recipe with Splenda to lighten it up even more and in the future I would just use the sugar or a blend of the two. The frosting definitely had that Splenda aftertaste to it. Otherwise the frosting was good, so I look forward to trying it again without the sugar substitute.
Yield: 24 cupcakes
Ingredients:
Diet co*ke Cupcakes:
- 1 box of cake mix – it can be any flavor, I used chocolate
- 1 can of diet soda – I used Diet co*ke but again, it can be any flavor
- 2 egg whites
Cream Cheese Frosting:
- 8 oz 1/3 fat cream cheese
- 1 cup powdered sugar
- 1 tsp vanilla extract
Directions:
MyWW SmartPoints per (1 cupcake) serving: (SP calculated using the recipe builder on weightwatchers.com)
Green: 5 SmartPoints/ Blue: 5 SmartPoints/ Purple: 5 SmartPoints
Weight Watchers Points Plus:
3 per cupcake (P+ calculated using the recipe builder on weightwatchers.com)

I have made diet soda cupcakes several times, but that frosting takes them to a whole new level! Even my diet-phobe husband liked them (!!!). I did a little write up on my blog if you want to check it out

Can you believe I’ve never even tried co*ke Zero? I should get some. I’m sure it would be fine to use that instead. Hope you like the cupcakes!

if you used pepsi max (There NOTHING in it but 25mg of sodium )that it would bring the points down at all?

So, they’re 1 WW ppl using the powdered sugar? Or 1 ppl with the splenda? And you used standard cupcake pans?
